Chicken Cordon Bleu Meatloaf

Ingredients
  

1 pound ground chicken

1 cup bread crumbs

1/2 cup grated Parmesan cheese

1/2 cup diced ham

1 cup shredded Swiss cheese

1/4 cup finely chopped fresh parsley

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup cream of chicken soup (for glazing)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Mix Ingredients: In a large mixing bowl, combine the ground chicken, bread crumbs, Parmesan cheese, diced ham, Swiss cheese, parsley, eggs, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix until just combined; do not overmix as it may make the meatloaf dense.

      Shape the Loaf: Lightly grease a loaf pan or line it with parchment paper. Transfer the meat mixture to the pan and shape it into a loaf.

        Add Glaze: Spread the cream of chicken soup evenly over the top of the meatloaf to create a flavorful glaze. This will keep the meatloaf moist while adding a rich flavor.

          Bake: Bake in the preheated oven for 1 hour or until the internal temperature reaches 165°F (74°C). If you’d like a darker top, broil for an additional 2-3 minutes.

            Rest and Serve: Once done, remove the meatloaf from the oven and let it rest for about 10 minutes. Slice and serve while warm, garnished with extra parsley if desired.
