Chicken Bacon Ranch Pasta

Ingredients
  

8 oz. penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

6 slices bacon, chopped

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup ranch dressing

1 cup shredded cheddar cheese

1 cup baby spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and drain on paper towels. Leave about 1 tablespoon of bacon fat in the skillet.

      Sauté the Chicken: In the same skillet, add olive oil. Once hot, add the diced chicken breasts, season with salt and pepper, and cook until browned and cooked through, about 6-7 minutes. Remove the chicken and set aside.

        Sauté Vegetables: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 1 minute until fragrant.

          Make the Sauce: Reduce heat to low and stir in the heavy cream and ranch dressing, stirring until combined. Add the shredded cheddar cheese and stir until melted and creamy.

            Combine Ingredients: Add the cooked pasta, chicken, cooked bacon, and baby spinach to the skillet. Toss to combine all ingredients thoroughly. Cook for an additional 2-3 minutes until everything is heated through and spinach is wilted.

              Serve: Remove from heat, garnish with fresh parsley, and serve warm.
