3 cups cooked, shredded rotisserie chicken

2 cups chicken broth

1 cup milk

1 cup frozen peas and carrots

1 cup diced onion

2 cloves garlic, minced

2 cups biscuit mix

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.

      Prepare Filling: In the same skillet, add the frozen peas and carrots, shredded chicken, dried thyme, dried rosemary, onion powder, garlic powder, salt, and pepper. Pour in the chicken broth and milk, stirring until everything is well combined. Let it simmer for about 5 minutes.

        Make Dumplings: In a separate bowl, prepare the biscuit mix according to the package instructions. If the mix calls for milk, use just enough to create a thick, sticky dough that can be spooned onto the filling. If desired, you can add herbs or spices to the dumpling mix for added flavor.

          Assemble Casserole: Pour the chicken mixture into a greased 9x13 inch casserole dish. Drop spoonfuls of the dumpling mixture evenly on top of the chicken filling, leaving some space between them.

            Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the dumplings are cooked through and golden brown on top.

              Garnish and Serve: Once baked, remove the casserole from the oven and let it sit for 5 minutes. Garnish with fresh parsley if desired. Serve hot and enjoy a hearty meal!
