9 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

½ cup Parmesan cheese, grated

2 cups Alfredo sauce (store-bought or homemade)

1 cup spinach, chopped (optional)

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the Lasagna Noodles:

      In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside on a baking sheet to cool, separating them with a drizzle of olive oil to prevent sticking.

        Prepare the Filling:

          In a mixing bowl, combine the shredded chicken, ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, minced garlic, chopped spinach (if using), Italian seasoning, salt, and pepper. Mix until well combined.

            Assemble the Rolls:

              Spread a thin layer of Alfredo sauce on the bottom of a 9x13-inch baking dish. Take one lasagna noodle, place about 2-3 tablespoons of the chicken mixture on one end, and roll it up tightly. Place the rolls seam-side down in the prepared baking dish. Repeat with the remaining noodles and filling.

                Sauce it Up:

                  Once all the rolls are in the dish, pour the remaining Alfredo sauce over the top. Sprinkle the remaining mozzarella and Parmesan cheese evenly over the sauce.

                    Bake:

                      Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                        Garnish and Serve:

                          Once done, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
