Ingredients

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon pure vanilla extract

1 tablespoon maple syrup

1 cup old-fashioned oats

1/2 cup chopped pecans (optional)

Powdered sugar for dusting (optional)

Instructions

Preheat Your Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined. Set aside.

Cream Butter and Sugars: In a large mixing bowl, beat the softened butter with brown sugar and granulated sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).

Add Egg and Flavorings: Add the egg, vanilla extract, and maple syrup to the butter mixture. Mix until everything is well incorporated and smooth.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet mixture. Stir with a spatula or wooden spoon until just combined. Be careful not to overmix.

Add Oats and Nuts: Gently fold in the oats and chopped pecans (if using). The dough will be thick and chewy.

Scoop and Bake: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving some space between each cookie. Flatten them slightly with the back of the scoop or your hand.

Bake and Cool: Bake in the preheated oven for 12-15 minutes, or until the edges begin to turn golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Dust with Powdered Sugar: If desired, dust the cooled cookies with powdered sugar before serving for an extra touch of sweetness.

Enjoy: Serve your Chewy French Toast Cookies with a drizzle of maple syrup for dipping or just enjoy them as they are!
