4 large bell peppers (any color)

1 cup cooked quinoa (or brown rice)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1/2 cup shredded cheddar cheese (or any cheese of your choice)

1/4 cup fresh cilantro, chopped (optional)

1 tablespoon olive oil

Optional toppings: avocado slices, sour cream, or additional cheese

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly drizzle the outside of each pepper with olive oil and place them in a baking dish upright.
