Ingredients
  

4 boneless, skinless chicken thighs

2 cups baby potatoes, halved

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried Italian herbs (or fresh, if available)

1 teaspoon paprika

Salt and pepper to taste

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the skillet: Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium heat.

    Sear the chicken: Season both sides of the chicken thighs with salt, pepper, paprika, and dried Italian herbs. Add the chicken to the skillet and sear for about 5-7 minutes on each side until golden brown. Remove and set aside.

      Cook the potatoes: In the same skillet, add the remaining 2 tablespoons of olive oil. Toss in the halved baby potatoes, sprinkle with salt and pepper, and sauté for about 10-12 minutes, until they are tender and crispy on the outside.

        Add garlic: Once the potatoes are nearly done, add the minced garlic to the skillet. Cook for an additional 1-2 minutes until fragrant.

          Combine chicken and cheese: Nestle the seared chicken thighs back into the skillet with the potatoes. Sprinkle the Parmesan cheese evenly over the chicken and potatoes, followed by the mozzarella cheese.

            Melt the cheese: Cover the skillet and reduce the heat to low. Cook for about 5 minutes, or until the cheese is melted and bubbly.

              Garnish and serve: Remove from heat and sprinkle chopped fresh parsley over the top. Serve hot directly from the skillet for a cozy presentation!
