Cheesy Sausage and Egg Breakfast Casserole

1 pound breakfast sausage, crumbled

8 large eggs

2 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 large baguette or 6 cups cubed bread (preferably stale)

1/2 cup chopped green onions (for garnish)

Optional: diced bell peppers or spinach for added vegetables

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Sausage: In a large skillet over medium heat, cook the crumbled sausage until browned and fully cooked, about 6-8 minutes. Drain excess fat and set aside.

      Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper until well combined and frothy.

        Combine Ingredients: In a greased 9x13-inch baking dish, evenly spread the cubed bread. Add the cooked sausage on top of the bread, followed by the shredded cheddar and mozzarella cheeses. If using, sprinkle diced bell peppers or spinach over the top.

          Pour Egg Mixture: Pour the egg mixture over the bread and sausage layer, ensuring all pieces of bread are soaked in the liquid. Gently press down with a spatula if needed.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the eggs are set in the center and the top is lightly golden.

              Garnish and Serve: Once removed from the oven, allow the casserole to cool for a few minutes. Garnish with chopped green onions before slicing and serving.
