Cheesy Ravioli Soup

A delightful twist on a classic dish.

Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable or chicken broth

1 can (14.5 oz) diced tomatoes, with juices

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

12 oz fresh or frozen cheese ravioli

2 cups fresh spinach or kale, roughly chopped

1 cup heavy cream

1 cup shredded mozzarella cheese

Fresh parsley or basil, for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes.

    Add the minced garlic and cook for an additional minute until fragrant.

      Pour in the vegetable or chicken broth and the diced tomatoes (with their juices). Stir in the dried basil, dried oregano, salt, and pepper. Bring the mixture to a boil.

        Reduce the heat to a simmer and add the ravioli to the pot. Cook according to package instructions until the ravioli are tender, usually about 5-7 minutes for fresh ravioli or 10-12 minutes for frozen.

          Stir in the chopped spinach or kale and let it wilt for about 2 minutes.

            Lower the heat and carefully stir in the heavy cream, allowing the soup to heat through without boiling.

              Add the shredded mozzarella cheese, stirring until melted and well combined. Adjust seasoning with additional salt and pepper as needed.

                Serve the soup hot, garnished with fresh parsley or basil, for a burst of color and flavor.
