Ingredients

1 lb smoked sausage, sliced into 1/2-inch pieces

1.5 lbs baby potatoes, halved (or quartered if large)

1 cup shredded cheddar cheese

1 packet ranch seasoning mix

1/4 cup olive oil

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1/4 cup chopped green onions (for garnish)

1/4 cup sour cream (optional, for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and prepare a large baking sheet with parchment paper or a light coating of non-stick spray.

Prepare the Potatoes: In a large bowl, combine the halved baby potatoes, olive oil, ranch seasoning, garlic powder, onion powder, salt, and pepper. Toss until the potatoes are evenly coated.

Combine with Sausage: Add the smoked sausage slices to the bowl with the potatoes and toss to mix everything together evenly.

Bake: Spread the potato and sausage mixture in a single layer on the prepared baking sheet. Bake in the preheated oven for about 25-30 minutes or until the potatoes are tender and lightly golden, stirring halfway through for even cooking.

Add Cheese: Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese over the top. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbling.

Garnish and Serve: Once done, take the baking sheet out and let it cool for a few minutes. Then, sprinkle chopped green onions on top, and serve immediately. You can also drizzle with sour cream for an extra creamy touch!
