Cheesy Onion & Mushroom Meatloaf

1 lb ground beef

1 cup finely chopped mushrooms

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 large egg

1 cup breadcrumbs (preferably seasoned)

1/4 cup milk

2 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp salt

1/2 tsp black pepper

1/2 cup ketchup (for topping)

Optional: Fresh parsley for garnish

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper for easy removal.

    Sauté the veggies: In a skillet over medium heat, add a splash of olive oil and sauté the chopped onions, mushrooms, and minced garlic until the onions are translucent and the mushrooms have released their moisture, about 5-7 minutes. Remove from heat and let cool slightly.

      Combine ingredients: In a large mixing bowl, combine the ground beef, sautéed onion and mushroom mixture, shredded cheddar cheese, egg, breadcrumbs, milk, Worcestershire sauce, thyme, salt, and pepper. Use your hands or a spoon to mix everything together until just combined. Be careful not to overmix.

        Shape the loaf: Transfer the meat mixture into the prepared loaf pan, shaping it into a loaf. Smooth the top for even cooking.

          Add the ketchup topping: Spread the ketchup evenly over the top of the meatloaf, ensuring it covers the entire surface to retain moisture and add flavor.

            Bake: Place the loaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C). If the top starts to brown too much, you can cover it loosely with aluminum foil.

              Rest and serve: Once done, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. Garnish with fresh parsley if desired, and serve with your favorite sides like mashed potatoes or steamed vegetables.
