Ingredients
  

1 lb ground beef

1 lb ground pork

1 cup breadcrumbs

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1/2 cup milk

1 large egg

1 small onion, finely chopped

2 cloves garlic, minced

1 cup bell peppers, diced (red, green, and yellow for color)

1 cup zucchini, diced

1 cup carrots, grated

1 tsp Worcestershire sauce

2 tbsp tomato ketchup

1 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Preheat the oven to 375°F (190°C) and prepare a large casserole dish by greasing it lightly with cooking spray or olive oil.

    Sauté vegetables: In a skillet over medium heat, add a splash of olive oil. Sauté the onions, garlic, bell peppers, zucchini, and grated carrots until they are soft, about 5-7 minutes. Remove from heat and allow to cool slightly.

      Mix the meatloaf: In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, shredded cheddar cheese, grated Parmesan cheese, milk, egg, Worcestershire sauce, ketchup, Italian seasoning, salt, and pepper. Add the sautéed vegetables to the meat mixture and stir until everything is well combined.

        Shape the meatloaf: Transfer the meat mixture into the prepared casserole dish. Shape it into a flat loaf approximately 2 inches thick.

          Top with cheese: Sprinkle additional shredded cheddar cheese over the top of the meatloaf.

            Bake: Place the casserole dish in the preheated oven and bake for 45-50 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F (70°C)) and the cheese is bubbly and golden brown.

              Rest and serve: Remove the casserole from the oven and let it rest for about 10 minutes. Garnish with chopped fresh parsley before slicing and serving.
