1 lb ground beef or ground turkey

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 cup shredded cheddar cheese (plus extra for topping)

1/4 cup milk

1 egg

1 small onion, finely diced

2 cloves garlic, minced

1 cup diced bell peppers (red and green)

1 cup chopped spinach (fresh or frozen)

1 tsp dried oregano

1 tsp smoked paprika

Salt and pepper to taste

1 cup marinara sauce

1/2 cup mixed vegetables (peas, corn, and carrots)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C) and grease a 9x13 inch casserole dish.

    Prepare the meatloaf mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, 1 cup of the shredded cheddar cheese, milk, egg, diced onion, minced garlic, diced bell peppers, chopped spinach, oregano, smoked paprika, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

      Transfer to the casserole dish: Press the meat mixture evenly into the prepared casserole dish, shaping it slightly into a loaf.

        Add the marinara sauce: Spread the marinara sauce evenly on top of the meatloaf mixture, covering it completely.

          Mix in the vegetables: In a small bowl, combine the mixed vegetables and pour them evenly over the marinara sauce layer.

            Cheese it up: Sprinkle the remaining shredded cheddar cheese over the top of the casserole.

              Bake: Place the casserole in the preheated oven and bake for about 35-40 minutes, or until the meat is cooked through and the internal temperature reaches 160°F (70°C).
