Ingredients

1 lb (450g) ground beef

1 lb (450g) Italian sausage, casings removed

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1 cup shredded cheddar cheese, divided

1 large egg

1/4 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp Worcestershire sauce

Salt and pepper to taste

1 cup mashed potatoes (prepared)

1 cup mixed vegetables (peas, corn, and carrots)

Fresh parsley for garnish (optional)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking casserole dish with non-stick spray.

In a large mixing bowl, combine the ground beef, Italian sausage, breadcrumbs, grated Parmesan cheese, half of the shredded cheddar cheese, egg, milk, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix until all ingredients are thoroughly combined.

Transfer the meat mixture into the prepared casserole dish and shape it into a loaf, smoothing the top nicely.

Spread the mashed potatoes on top of the meatloaf, creating a smooth and even layer.

Sprinkle the mixed vegetables evenly over the mashed potatoes.

Top the casserole with the remaining shredded cheddar cheese, spreading it all over the surface.

Bake in the preheated oven for 45-50 minutes, or until the internal temperature of the meatloaf reaches 160°F (70°C) and the cheese is bubbly and golden.

Remove from the oven and let it rest for about 10 minutes before slicing.

Garnish with fresh parsley if desired, then serve and enjoy!
