Cheesy Loaded Baked Potatoes

4 large russet potatoes

1 cup shredded sharp cheddar cheese

½ cup sour cream

½ cup cooked bacon, crumbled

¼ cup green onions, sliced

¼ cup milk

2 tablespoons butter

Salt and pepper, to taste

Optional toppings: jalapeños, diced tomatoes, more cheese

Instructions
 

Preheat your oven to 425°F (220°C).

    Scrub the russet potatoes thoroughly under running water. Dry them with a towel and prick the skins a few times with a fork.

      Rub each potato with a bit of olive oil and sprinkle with salt. Place them directly on the oven rack and bake for about 45-60 minutes, or until fork-tender.

        While the potatoes are baking, cook the bacon until crispy; crumble and set aside.

          In a small bowl, mix the sour cream, milk, butter, salt, and pepper to create a creamy base for topping.

            Once the potatoes are cooked, remove them from the oven and let them cool slightly.

              Slice each potato down the middle, gently push the ends together to create an opening.

                Top each potato with a generous amount of the creamy mixture, followed by the shredded cheddar cheese, crumbled bacon, and sliced green onions.

                  Return the loaded potatoes to the oven for an additional 10-15 minutes or until the cheese is bubbly and melted.

                    Remove from the oven and add any additional toppings you desire, such as jalapeños or diced tomatoes.
