Ingredients
  

1 lb ground beef

1 cup long-grain rice

1 can (15 oz) diced tomatoes with green chilies

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup frozen mixed vegetables (peas, carrots, and corn)

Fresh parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook for about 5 minutes until browned. Drain excess fat.

      Sauté Vegetables: Add the diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 3-4 minutes.

        Mix Ingredients: Stir in the diced tomatoes, cream of mushroom soup, beef broth, rice, chili powder, cumin, salt, and pepper. Add the frozen mixed vegetables, mixing everything until well combined.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch casserole dish and spread evenly.

            Add Cheese: Sprinkle the shredded cheddar and mozzarella cheese on top of the mixture.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                Serve: Let the casserole cool for about 10 minutes before serving. Garnish with fresh parsley if desired.
