The first step in making your cheesy garlic pull-apart rolls is to activate the yeast. This process is vital for ensuring that your rolls rise properly and develop the desired texture. Start by measuring out the warm milk into a small bowl and adding the active dry yeast. Sprinkle a teaspoon of sugar over the yeast and let it sit for about 5-10 minutes. During this time, the yeast will begin to froth and bubble, indicating that it is alive and ready to be incorporated into your dough.

Ingredients

4 cups all-purpose flour

1 packet (2 1/4 tsp) active dry yeast

1 cup warm milk (110°F or 43°C)

1/4 cup sugar

1/4 cup unsalted butter, melted

1 tsp salt

3 cloves garlic, minced

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 tsp dried Italian herbs (oregano, basil)

1/4 cup fresh parsley, chopped (for garnish)

Olive oil (for brushing)

Instructions

Activate Yeast: In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Make Dough: In a large mixing bowl, combine the flour and salt. Make a well in the center, then pour in the melted butter, the yeast mixture, and dried Italian herbs. Mix until the dough comes together.

Knead Dough: Transfer the dough onto a floured surface and knead for about 5-7 minutes until it is smooth and elastic. If the dough is too sticky, add a little more flour.

First Rise: Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Filling: In a small bowl, mix the minced garlic with olive oil. Set aside.

Shape Rolls: Once the dough has risen, punch it down, then divide it into 24 equal pieces. Flatten each piece slightly and place a generous spoonful of mozzarella and Parmesan cheese in the center. Fold the dough around the cheese and roll into a ball shape.

Assemble Rolls: Grease a bundt pan or a round baking dish. Place the cheese-filled rolls in the pan, stacking them up. Brush the tops with the garlic olive oil mixture.

Second Rise: Cover the pan with a cloth and allow the rolls to rise again for about 30 minutes, until puffy.

Preheat Oven: Preheat your oven to 350°F (175°C).

Bake: Bake the rolls for 25-30 minutes or until golden brown and the cheese is bubbly.

Garnish and Serve: Once they are out of the oven, sprinkle with fresh parsley and let cool for a few minutes. Serve warm and enjoy the cheesy goodness!
