All-purpose flour serves as the backbone of the dough, providing the necessary structure and texture. Its moderate protein content allows for the right balance of elasticity and tenderness, essential for achieving that flaky, layered effect typical of croissants. When measuring flour, it’s best to spoon it into your measuring cup and level it off to ensure accuracy, as too much flour can lead to a dense cruffin.

Ingredients

2 cups all-purpose flour

1/2 cup unsalted butter, melted

1/2 cup milk, warmed

1/4 cup granulated sugar

1 tablespoon active dry yeast

1 teaspoon salt

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Dough: In a mixing bowl, combine warm milk, sugar, and yeast. Allow it to sit for about 5 minutes until it becomes frothy. Add melted butter, flour, salt, garlic powder, and onion powder. Mix until a dough forms.

Knead and Rise: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place it in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Make the Filling: In a small bowl, mix the shredded mozzarella, grated Parmesan, and minced garlic together. Set aside.

Shape the Cruffins: Once the dough has risen, punch it down and roll it out into a rectangle about 1/4 inch thick. Spread the cheese and garlic mixture evenly over the dough.

Roll and Cut: Tightly roll the dough from one long side to the other to form a log. Slice the log into 12 equal pieces.

Arrange in Muffin Tin: Take each slice and twist it slightly before placing it upright in a greased muffin tin, ensuring that each piece fits snugly.

Second Rise: Cover the muffin tin with a cloth and allow the cruffins to rise for an additional 30 minutes.

Preheat and Bake: While the cruffins are rising, preheat your oven to 375°F (190°C). Once the second rise is done, bake them for 18-20 minutes, or until golden brown and cheese is bubbly.

Garnish and Serve: Remove from the oven and let cool slightly. Brush the tops with melted butter, sprinkle with additional parmesan, and garnish with fresh parsley before serving.
