1 large head of cauliflower, cut into florets

1 cup cheddar cheese, shredded

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp onion powder

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp cayenne pepper (optional for a kick)

1/4 cup green onions, chopped (for garnish)

1/4 cup breadcrumbs (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and blanch them for about 3-4 minutes, until slightly tender. Drain and set aside.

      Make the Cheese Mix: In a mixing bowl, combine the cream cheese, sour cream, cheddar cheese, Parmesan cheese, minced garlic, onion powder, paprika, salt, black pepper, and cayenne pepper. Mix until all ingredients are well incorporated and smooth.

        Combine with Cauliflower: In a large baking dish, combine the blanched cauliflower with the cheese mixture, stirring to make sure all the florets are well coated.

          Add Topping: Sprinkle breadcrumbs evenly over the top of the cheese-covered cauliflower.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

              Garnish and Serve: Remove from the oven, let it sit for a few minutes, then sprinkle with chopped green onions before serving.
