Breakfast casseroles have become a beloved staple in many households, providing a convenient and hearty meal option that's perfect for busy mornings or leisurely brunches. With the ability to prepare a dish ahead of time and simply pop it in the oven when you’re ready to eat, breakfast casseroles are the ultimate solution for feeding a crowd without too much fuss. Among the myriad of combinations available, one dish stands out for its irresistible combination of flavors: the Cheesy Bacon Potato Breakfast Casserole.

Cheesy bacon potato breakfast casserole

A delightful twist on a classic dish.

Ingredients
  

1 lb (450g) bacon, chopped

1 medium onion, diced

1 bell pepper, diced

2 cups (300g) frozen hash browns, thawed

2 cups (200g) shredded cheddar cheese

6 large eggs

1 cup (240ml) milk

1 tsp garlic powder

1 tsp paprika

Salt and black pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to remove the bacon and drain on paper towels. Leave about 2 tablespoons of bacon grease in the skillet.

      Sauté Vegetables: In the same skillet with the bacon grease, add the diced onion and bell pepper. Sauté until softened, about 3-4 minutes. Remove from heat.

        Combine Ingredients: In a large mixing bowl, combine the thawed hash browns, cooked bacon (reserving some for topping), sautéed onion and bell pepper, and 1 ½ cups of shredded cheddar cheese. Mix well.

          Prepare Egg Mixture: In another bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and black pepper until well combined.

            Combine Mixtures: Pour the egg mixture over the hash brown mixture and gently fold until everything is well combined.

              Transfer to Baking Dish: Grease a 9x13 inch (23x33 cm) baking dish and pour the entire mixture into the dish. Spread the mixture evenly using a spatula. Top with the remaining cheddar cheese and reserved bacon.

                Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the casserole is set in the middle and the top is golden brown.

                  Cool and Serve: Allow the casserole to cool for 5 minutes before slicing. Garnish with fresh chives or parsley if desired and serve warm.
