Cheesecake Stuffed Chocolate Chip Cookies

1 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 cups semi-sweet chocolate chips

8 oz cream cheese, softened

1/3 cup granulated sugar

1 teaspoon vanilla extract

1 large egg yolk

Prep the Cheesecake Filling: In a mixing bowl, combine the softened cream cheese, 1/3 cup granulated sugar, 1 teaspoon vanilla extract, and egg yolk. Beat until smooth and creamy. Set aside.

    Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, 3/4 cup granulated sugar, and brown sugar until light and fluffy. Add the egg and 1 teaspoon vanilla extract, and mix until well combined.

      In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.

        Chill the Cookie Dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes. This step helps the cookies maintain their shape while baking.

          Assemble the Cookies: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Take about 1.5 tablespoons of cookie dough and flatten it slightly in your palm. Place about 1 teaspoon of the cheesecake filling in the center, then wrap the cookie dough around the filling, ensuring it is completely enclosed. Roll into a ball and place on the prepared baking sheet.

            Bake: Repeat with the remaining dough and filling. Space the cookie dough balls about 2 inches apart on the baking sheet. Bake for 12-15 minutes, or until the edges are golden brown. The centers may look slightly underbaked; this is fine as they will continue to firm up while cooling.
