Crust:

1 ½ cups chocolate cookie crumbs

½ cup unsalted butter, melted

1/4 cup granulated sugar

Cheesecake Filling:

4 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup Godiva chocolate liqueur

8 oz semi-sweet chocolate, melted and slightly cooled

Topping:

1 cup sour cream

1/4 cup powdered sugar

1/2 cup mini chocolate chips (optional)

Instructions
 

Make the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine chocolate cookie crumbs, melted butter, and granulated sugar. Mix until well combined.

        - Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

          Prepare the Cheesecake Filling:

            - In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth.

              - Gradually add in the granulated sugar and vanilla extract, beating until fully incorporated.

                - Add the eggs one at a time, mixing until just combined after each addition.

                  - Gently fold in the melted chocolate and Godiva chocolate liqueur until the mixture is smooth and creamy.

                    Combine and Bake:

                      - Pour the cheesecake filling over the cooled crust in the springform pan.

                        - Bake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly.

                          - Turn off the oven and leave the cheesecake inside for an additional hour to prevent cracking.

                            Prepare the Sour Cream Topping:

                              - In a medium bowl, combine sour cream and powdered sugar. Mix until smooth.

                                - After the cheesecake has cooled for about an hour in the oven, spread the sour cream mixture over the top of the cheesecake.

                                  Chill:

                                    - Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours, preferably overnight for best taste.

                                      Serve:
