2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

4 medium potatoes, peeled and diced

4 cups vegetable or chicken broth

3 cups fresh broccoli florets

2 cups sharp cheddar cheese, shredded

1 cup heavy cream

1 teaspoon dried thyme

Salt and pepper to taste

Optional toppings: croutons, extra cheese, chopped green onions

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced potatoes and broth to the pot. Bring to a simmer and cook until the potatoes are tender, about 15-20 minutes.

        Once the potatoes are cooked, add the broccoli florets and thyme to the pot. Cook for another 5-7 minutes until the broccoli is tender.

          Using an immersion blender, blend the soup until smooth. You can also transfer it in batches to a blender; just be careful with the hot liquid.

            Return the blended soup to the pot and stir in the heavy cream and shredded cheddar cheese. Cook over low heat until the cheese is melted and the soup is warmed through.

              Season with salt and pepper to taste. If the soup is too thick, add a bit more broth or water to reach your desired consistency.

                Serve hot, garnished with optional toppings if desired.
