Cheddar & Bacon Twice-Baked Potato Casserole

Ingredients
  

4 large russet potatoes

1 cup cooked bacon, crumbled

2 cups sharp cheddar cheese, grated

1 cup sour cream

1/2 cup milk

1/4 cup butter, melted

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/2 cup green onions, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Potatoes: Wash and pierce the russet potatoes with a fork. Place them directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

      Prepare the Casserole Mixture: Once the potatoes are done, remove them from the oven and let them cool slightly. Cut them in half lengthwise and scoop the insides into a large mixing bowl, leaving a thin layer of potato in the skins.

        Mix Ingredients: To the bowl with the potato flesh, add crumbled bacon, 1 1/2 cups of cheddar cheese, sour cream, milk, melted butter, garlic powder, onion powder, salt, and pepper. Mix everything together until well combined and creamy.

          Fill the Dish: Preheat your oven to 350°F (175°C). Spread the potato mixture into a greased 9x13 inch casserole dish, smoothing the top with a spatula.

            Add Cheese Topping: Sprinkle the remaining 1/2 cup of cheddar cheese evenly over the top of the potato mixture.

              Bake: Place the casserole in the oven and bake for 25-30 minutes, until heated through and the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let it cool slightly before serving. Garnish with chopped green onions for extra flavor and a pop of color.
