Ingredients
  

4 slices of sourdough bread

8 oz turkey breast, sliced (deli or roasted)

4 slices of sharp cheddar cheese

4 slices of crispy cooked bacon

1 tablespoon Dijon mustard

1 tablespoon mayonnaise

1 tablespoon unsalted butter, softened

Fresh arugula or baby spinach (optional)

Freshly cracked black pepper, to taste

Instructions
 

Prepare the Spread: In a small bowl, mix together Dijon mustard and mayonnaise until well combined. Set aside.

    Assemble the Sandwich: Lay two slices of sourdough bread on a clean countertop. Spread a generous amount of the mustard-mayo mixture on each slice. Layer the turkey breast evenly on one slice, followed by two slices of cheddar cheese and slices of crispy bacon. If desired, add a handful of arugula or spinach for a fresh crunch. Top with the second slice of sourdough, spread side down. Repeat this process for the second sandwich.

      Butter the Bread: Spread softened butter on the outside of each sandwich generously to ensure a golden-brown crust when grilled.

        Grill the Sandwich: Heat a skillet or griddle over medium heat. Carefully place the assembled sandwiches in the skillet. Cook until the bottom slice is golden brown and the cheese starts to melt, about 3 to 4 minutes. Carefully flip and grill the other side for another 3 to 4 minutes, pressing down lightly with a spatula for an even cook.

          Serve: Once both sides are golden and the cheese is melted, remove the sandwiches from the skillet and let them rest for a minute. Slice in half and serve with slices of pickles or a side salad for a complete meal.
