Carrot Apple Salad

Ingredients
  

2 large carrots, grated

1 large apple (preferably tart, like Granny Smith), cored and thinly sliced

1/4 cup raisins or dried cranberries

1/4 cup walnuts or pecans, chopped

2 tablespoons fresh lemon juice

1 tablespoon honey or maple syrup

1/4 teaspoon ground cinnamon

1/4 cup Greek yogurt (optional for creaminess)

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and sliced apple.

    Add the raisins or dried cranberries, and chopped nuts to the bowl, mixing well.

      In a small separate bowl, whisk together the lemon juice, honey (or maple syrup), and ground cinnamon.

        Pour the dressing over the carrot and apple mixture, and toss until everything is evenly coated.

          If using, fold in the Greek yogurt for a creamier texture.

            Let the salad sit for about 10 minutes to allow flavors to meld.

              Serve in individual bowls and garnish with fresh mint leaves if desired.
