2 lbs beef chuck, cut into 1-inch cubes

4 medium potatoes, peeled and diced into cubes

1 large onion, finely chopped

4 cloves garlic, minced

2 bell peppers (red and green), sliced

1 can (15 oz) diced tomatoes

1 cup beef broth

1 tablespoon tomato paste

1 tablespoon olive oil

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add the beef to the pot and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Vegetables: In the same pot, add the chopped onion, garlic, and sliced bell peppers. Sauté until the vegetables are soft and the onion is translucent, about 5 minutes.

      Add Spices: Stir in the ground cumin, smoked paprika, and dried oregano. Cook the spices with the vegetables for an additional minute to release their flavors.

        Combine Ingredients: Return the browned beef to the pot. Add the diced tomatoes (with their juices), beef broth, and tomato paste. Stir well to combine.

          Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1 hour, or until the beef is tender.

            Add Potatoes: After the beef has simmered, add the diced potatoes to the pot. Stir gently, cover, and cook for another 30-40 minutes, or until the potatoes are fork-tender.

              Adjust Seasoning: Taste the stew and adjust the seasoning with salt and pepper as needed.
