1 sheet of puff pastry (thawed if frozen)

3 large onions (preferably yellow or sweet), thinly sliced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 tablespoon balsamic vinegar

1 teaspoon sugar

Salt and freshly ground black pepper to taste

4 oz goat cheese, crumbled

1 cup heavy cream

2 large eggs

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Fresh arugula (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Puff Pastry: Roll out the puff pastry on a lightly floured surface to fit your tart pan (typically 9 inches). Trim the edges, prick the base with a fork to prevent bubbling, and place it in the refrigerator to chill while you prepare the filling.

      Caramelize the Onions: In a heavy-bottomed skillet, heat the olive oil and butter over medium-low heat. Add the sliced onions, stirring to coat. Cook slowly, stirring occasionally, for about 25-30 minutes until the onions are a deep golden brown and caramelized. Add sugar and balsamic vinegar, cooking an additional 5 minutes. Season with salt and pepper to taste. Remove from heat and let cool slightly.

        Prepare the Egg Mixture: In a mixing bowl, whisk together the heavy cream, eggs, thyme, and a pinch of salt and pepper until well combined.
