2 cups almond milk (or your preferred milk)

2 ripe bananas (1 mashed and 1 sliced)

3 tablespoons brown sugar (divided)

1 tablespoon unsalted butter (or coconut oil for a vegan option)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Pinch of salt

Optional toppings: chopped nuts, chia seeds, maple syrup, or a dollop of Greek yogurt

Instructions
 

Cook the Oats:

    In a medium saucepan, combine the rolled oats, almond milk, and a pinch of salt. Bring the mixture to a gentle boil over medium heat. Once boiling, reduce the heat to low and simmer for about 5-7 minutes, stirring occasionally until the oats are creamy and cooked to your desired consistency.

      Mash the Banana:

        While the oats are cooking, take one ripe banana and mash it in a bowl using a fork. Once the oatmeal is ready, stir in the mashed banana, vanilla extract, and ground cinnamon. Mix well to combine and remove from heat.

          Caramelize the Sliced Banana:

            In a small skillet, melt the butter over medium heat. Once melted, add the sliced banana and sprinkle with 2 tablespoons of brown sugar. Cook for 2-3 minutes, gently flipping the banana slices, until they are golden brown and caramelized. The sugar will create a lovely syrup that coats the bananas.
