Ingredients

4 slices of thick-cut bread (Brioche or Challah work best)

2 ripe bananas, sliced

2 large eggs

1/2 cup milk (dairy or your favorite plant-based variety)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

2 tablespoons butter (for cooking)

1/4 cup brown sugar

A pinch of salt

Maple syrup (for serving)

Optional toppings: whipped cream, chopped nuts, or a dusting of powdered sugar

Instructions

Prepare the Custard Mixture: In a bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt until well combined. Set aside.

Caramelize the Bananas: In a large skillet, melt 1 tablespoon of butter over medium heat. Add the brown sugar and stir until bubbly. Gently place the sliced bananas in the pan and cook for about 2-3 minutes per side, until they are golden and caramelized. Remove from the skillet and set aside.

Dip the Bread: Heat the same skillet over medium heat and add the remaining tablespoon of butter. Dip each slice of bread into the egg mixture, allowing it to soak for about 15-20 seconds per side, ensuring the bread absorbs the custard.

Cook the French Toast: Place the soaked bread slices in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy. You may have to cook in batches if your skillet is small.

Serve: Once cooked, arrange the French toast on plates. Top each slice with the caramelized bananas, drizzle with maple syrup, and add any additional toppings you prefer.

Enjoy: Serve warm and relish this sweet morning treat!
