1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 large egg

2 tablespoons unsalted butter, melted

2 ripe bananas, sliced

1/4 cup brown sugar

2 tablespoons rum (optional)

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

Whipped cream or vanilla ice cream for serving

Prepare the Pancake Batter:

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, combine the buttermilk, egg, and melted butter. Pour this wet mixture into the dry ingredients and gently mix until just combined. Avoid overmixing; some lumps are okay.

      Cook the Bananas:

        In a skillet over medium heat, add the sliced bananas, brown sugar, and cinnamon. Stir gently and cook for about 2 minutes until the bananas start to soften and caramelize. If using rum, add it at this stage and carefully ignite with a long lighter to flambé (this step is optional). Once the rum has burned off, turn off the heat and set the bananas aside.

          Cook the Pancakes:

            Wipe the skillet clean and heat it over medium heat. Lightly grease with butter. Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook until golden brown on the other side (another 1-2 minutes). Repeat with the remaining batter, greasing the skillet as needed.

              Assemble the Dish:

                Stack two or three pancakes on a plate per serving. Top with the warm caramelized bananas and any syrup or sweet topping of your choice (maple syrup or whipped cream is recommended).
