For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

For the apple layer:

4 medium Granny Smith apples, peeled, cored, and thinly sliced

½ cup brown sugar

2 teaspoons cinnamon

2 tablespoons lemon juice

1 tablespoon unsalted butter

For the caramel sauce:

1 cup granulated sugar

6 tablespoons unsalted butter, room temperature

½ cup heavy cream

1 teaspoon vanilla extract

Pinch of salt

Prepare the crust: Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.

    Make the filling: In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add the sugar and vanilla, mixing well. Add eggs, one at a time, mixing just until combined. Finally, stir in the sour cream.

      Prepare the apple layer: In a separate bowl, toss the sliced apples with brown sugar, cinnamon, and lemon juice. In a large skillet over medium heat, melt the butter and add the apple mixture. Cook until the apples are slightly softened, about 5 minutes, then remove from heat.

        Assemble the cheesecake: Pour half of the cheesecake filling over the cooled crust. Spread half of the apple mixture on top, then pour the remaining cheesecake filling over the apples. Finally, layer the rest of the apple mixture on top.

          Bake the cheesecake: Wrap the springform pan with aluminum foil to prevent water from leaking in, then place it in a larger baking dish filled with water (water bath method). Bake for 1 hour, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

            Make the caramel sauce: In a medium saucepan, heat the sugar over medium heat, stirring constantly until it melts and turns golden brown. Add the butter and stir until melted. Slowly add the heavy cream, continuing to stir until smooth. Remove from heat and stir in the vanilla and salt. Let it cool to thicken.

              Chill and serve: Refrigerate the cheesecake for at least 4 hours, or overnight for best results. Once chilled, drizzle generously with homemade caramel sauce just before serving.
