1 pre-made graham cracker crust

1 cup candy corn, divided (plus more for garnish)

1 cup cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 tablespoon gelatin powder

3 tablespoons cold water

1/2 cup pumpkin puree (optional, for color and flavor)

A pinch of salt

Whipped cream, for serving (optional)

Instructions
 

Prepare the Gelatin: In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for about 5 minutes to bloom.

    Melt the Candy Corn: In a saucepan over low heat, melt 3/4 cup of the candy corn while stirring gently. Remove from heat once it is smooth and fully melted.

      Mix Cream Cheese: In a large bowl, beat the softened cream cheese with a mixer until smooth. Add in the powdered sugar, vanilla extract, and a pinch of salt. Mix until creamy.

        Incorporate Pumpkin (Optional): If using, fold in the pumpkin puree until well combined for a hint of fall flavor.

          Add Whipped Cream: In another bowl, whip the heavy cream until stiff peaks form, and then gently fold it into the cream cheese mixture until no streaks remain.

            Combine Everything: Incorporate the melted candy corn into the mixture, followed by the bloomed gelatin (microwave briefly if solidified) to ensure even distribution. Mix until well combined.

              Pour Into Crust: Pour the filling into the prepared graham cracker crust, smoothing the top with a spatula.
