2 large oranges

1 cup granulated sugar

1 cup water

Pinch of salt

1/2 cup chopped candied orange peel (homemade or store-bought)

1/4 cup chopped nuts (e.g., pistachios, almonds, or walnuts) - optional

Prepare the Candied Orange Peel:

    - Wash and scrub the oranges thoroughly. Cut them into quarters and remove the flesh, leaving the peel intact.

      - Slice the orange peels into thin strips (about 1/4 inch wide).

        - In a medium saucepan, combine the water, sugar, and a pinch of salt. Bring to a boil over medium heat, stirring until the sugar dissolves.

          - Add the orange peels to the syrup and reduce the heat to a gentle simmer. Cook for about 45 minutes to 1 hour, or until the peels are translucent and tender. Stir occasionally to prevent sticking.

            - Once done, drain the peels and place them on a cooling rack lined with parchment paper. Allow them to cool completely. (Optional: Roll the cooled peels in sugar for added sweetness).

              Melt the Chocolate:

                - While the orange peels are cooling, chop the dark chocolate into small pieces and place it in a heat-proof bowl.

                  - Melt the chocolate using a double boiler or microwave. If using a microwave, heat in 20-second intervals, stirring in between until melted and smooth.

                    Combine and Prepare the Bark:

                      - Once melted, pour half of the chocolate onto a sheet of parchment paper, spreading it into a rectangle about 1/4 inch thick.

                        - Immediately sprinkle the chopped candied orange peels evenly over the chocolate layer. If using, also add the chopped nuts.
