2 ripe avocados

1 pound medium shrimp, peeled and deveined

1 tablespoon Cajun seasoning

1 tablespoon olive oil

1/2 cup diced red bell pepper

1/2 cup diced celery

1/4 cup red onion, finely chopped

2 tablespoons fresh parsley, chopped (plus more for garnish)

2 tablespoons mayonnaise

1 tablespoon lemon juice

Salt and pepper, to taste

Prepare the Shrimp: In a medium bowl, toss the shrimp with Cajun seasoning and a pinch of salt and pepper. Ensure all shrimp are evenly coated with the seasoning.
