1 lb (450 g) Cajun-style smoked sausage, sliced

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 medium onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 cup frozen green peas

2 tablespoons Cajun seasoning (or to taste)

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Skillet: In a large skillet or sauté pan, heat the olive oil over medium heat. Add the sliced Cajun sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set it aside.

    Sauté Vegetables: In the same skillet, add the diced onion, bell pepper, and garlic. Sauté for about 5 minutes, or until the vegetables are softened and fragrant.

      Add Rice: Stir in the rice, allowing it to toast slightly with the vegetables for about 2 minutes, stirring constantly to prevent burning.

        Combine Ingredients: Pour in the chicken broth, diced tomatoes, Cajun seasoning, thyme, and paprika. Stir well to combine all ingredients. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low. Cover the skillet with a lid and allow it to simmer for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to ensure it doesn’t stick.

            Add Peas and Sausage: After the rice is cooked, gently fold in the frozen green peas and the browned sausage. Cover and cook for an additional 5 minutes to heat through.

              Taste and Adjust: Remove the skillet from heat and taste for seasoning. Add salt and pepper as needed.
