Cabbage Roll Soup

A delightful twist on a classic dish.

Ingredients
  

1 lb ground beef or turkey

1 medium onion, chopped

3 cloves garlic, minced

1 large head of cabbage, chopped

1 cup uncooked rice (white or brown)

1 can (28 oz) crushed tomatoes

4 cups beef or vegetable broth

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt (to taste)

½ teaspoon black pepper

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

    Add the ground beef or turkey to the pot. Cook until browned and cooked through, breaking it apart with a spatula, about 7-10 minutes. Drain excess fat if necessary.

      To the meat mixture, stir in the chopped cabbage and cook until slightly softened, about 5 minutes.

        Add the uncooked rice, crushed tomatoes, beef or vegetable broth, tomato paste, oregano, thyme, paprika, salt, black pepper, and Worcestershire sauce. Stir well to combine all the ingredients.

          Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 30-35 minutes, or until the cabbage is tender and the rice is cooked through.

            Taste and adjust seasoning if necessary, adding more salt or pepper as desired.

              Serve the cabbage roll soup hot, garnished with fresh chopped parsley for a burst of flavor.
