Butternut Squash Fritters with Sage

2 cups cooked and mashed butternut squash

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup finely chopped fresh sage leaves

1/3 cup grated Parmesan cheese (or vegan cheese)

1/4 teaspoon ground nutmeg

1/2 teaspoon garlic powder

Salt and pepper to taste

1 large egg (or flax egg for vegan option)

Olive oil or vegetable oil, for frying

Prepare the Butternut Squash: If not using pre-cooked squash, peel, seed, and cube a medium-sized butternut squash. Boil it in salted water for about 15-20 minutes until fork-tender. Drain and mash until smooth. Allow to cool slightly.

    Mix Ingredients: In a large bowl, combine the mashed butternut squash, flour, chopped sage, grated Parmesan, nutmeg, garlic powder, salt, and pepper. Mix well until all ingredients are fully combined. If using an egg, beat it lightly and add it to the mixture. For a vegan option, mix one tablespoon of ground flaxseed with three tablespoons of water to create a flax egg and stir it in.

      Form Fritters: Using your hands, scoop about 2 tablespoons of the mixture and shape it into small patties. Repeat until all the mixture is formed into fritters.

        Heat the Oil: In a large skillet, add enough olive oil to cover the bottom and heat over medium heat. The oil should shimmer but not smoke.

          Fry the Fritters: Carefully place the fritters in the hot oil, pressing them down slightly to flatten. Fry in batches, ensuring not to overcrowd the pan, for about 3-4 minutes on each side or until golden brown and crispy.

            Drain and Serve: Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil. Serve warm, garnished with additional sage if desired. These fritters are delicious on their own or can be served with a dollop of sour cream, yogurt, or a dipping sauce of your choice.
