Ingredients
  

1 cup cherry tomatoes, halved

2 tablespoons olive oil

Salt and pepper, to taste

4 slices of crusty bread (such as sourdough or ciabatta)

8 ounces fresh burrata cheese

1 tablespoon balsamic glaze

Fresh basil leaves, for garnish

Optional: red pepper flakes, for added heat

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes: Place the halved cherry tomatoes on a baking sheet. Drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat. Roast for about 20 minutes or until the tomatoes are blistered and caramelized.

      Prepare the Bread: While the tomatoes are roasting, brush the slices of bread with the remaining tablespoon of olive oil on both sides. Place on a baking sheet and toast in the oven for about 5-7 minutes until golden and crispy.

        Assemble the Toasts: Once the bread is toasted, remove it from the oven. Gently tear the burrata cheese and place a generous amount on each slice of toast.

          Add the Tomatoes: Top the burrata with the roasted cherry tomatoes, arranging them decoratively on each toast.

            Garnish: Drizzle the balsamic glaze over the toasts and sprinkle with fresh basil leaves. For an extra kick, add red pepper flakes if desired.

              Serve: Enjoy immediately while the bread is warm and crispy!
