The first step in crafting your Buffalo Chicken Pasta Delight is to sauté aromatics, specifically onions and garlic. This process is crucial as it builds the flavor foundation for the entire dish. Start by heating a tablespoon of olive oil in a large skillet over medium heat. Once the oil is shimmering, add finely chopped onions. Cook them for about 3-5 minutes until they become translucent. The goal is to soften the onions without browning them, as this will keep their sweetness intact.

Ingredients

8 oz penne pasta

2 cups cooked chicken, shredded

1/2 cup Buffalo sauce (adjust for preference)

1 cup heavy cream

1/2 cup shredded mozzarella cheese

1/4 cup blue cheese crumbles

2 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1/2 tsp smoked paprika

1/4 tsp black pepper

1/4 cup chopped fresh parsley (for garnish)

Salt to taste

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.

Add Chicken and Sauce: Stir in the shredded chicken, Buffalo sauce, smoked paprika, and black pepper. Cook for about 2-3 minutes until the chicken is heated through.

Create the Creamy Base: Reduce the heat to low, then pour in the heavy cream. Stir well until combined and let it simmer for 2-3 minutes.

Combine with Pasta: Add the cooked penne to the skillet, tossing everything together. Gradually mix in the mozzarella cheese until melted and creamy. Taste and adjust seasoning with salt if necessary.

Final Touches: Once everything is combined and heated through, sprinkle the blue cheese crumbles over the top and gently fold them into the pasta.

Serve: Garnish with fresh parsley and extra Buffalo sauce, if desired. Serve hot, enjoying the delightful spicy and creamy flavors.
