2 cups shredded cooked chicken (rotisserie works great)

1/2 cup buffalo sauce (adjust to taste)

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

Cooking oil for frying

Ranch or blue cheese dressing for serving

Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, and half of the mozzarella cheese. Mix until well combined and the chicken is coated.

    Form the Sticks: On a sheet of parchment paper or a clean surface, take about 2 tablespoons of the chicken mixture and shape it into a stick about 3 inches long and 1 inch wide. Place it on a tray lined with parchment paper. Repeat until all the mixture is used.

      Freeze the Sticks: Once all the sticks are formed, place them in the freezer for about 30 minutes. This will help them hold their shape during frying.

        Set Up Breading Station: In three separate bowls, prepare your breading station. Place flour in one bowl, beat eggs in the second, and mix breadcrumbs with garlic powder, onion powder, paprika, salt, and pepper in the third.

          Bread the Sticks: Take the frozen chicken sticks out of the freezer. First, coat each stick in flour, shaking off the excess. Next, dip it in the beaten eggs, and finally, coat in the seasoned breadcrumbs. Ensure they are well coated for a crispy finish.

            Heat Oil: In a large skillet or deep fryer, heat oil over medium-high heat (about 350°F or 175°C). You want enough oil to submerge about half of the sticks.

              Fry the Sticks: Carefully add a few sticks at a time in the hot oil, being cautious not to overcrowd the pan. Fry for about 3-4 minutes per side or until golden brown and crispy.

                Drain and Serve: Use a slotted spoon to remove the sticks from the oil and transfer them to a plate lined with paper towels to drain excess oil. Repeat until all sticks are fried.

                  Garnish and Dip: Sprinkle with a bit of extra buffalo sauce if desired. Serve hot with ranch or blue cheese dressing for dipping.
