8 oz elbow macaroni

2 cups cooked chicken, shredded

1/2 cup buffalo sauce (adjust based on spice preference)

2 tbsp unsalted butter

2 tbsp all-purpose flour

2 cups whole milk

3 cups shredded sharp cheddar cheese

1/2 cup crumbled blue cheese (optional)

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1/2 cup panko breadcrumbs

2 tbsp olive oil

Chopped green onions for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour to form a roux, cooking for about 1 minute. Gradually whisk in the whole milk, ensuring there are no lumps. Continue whisking until the mixture thickens, about 5-7 minutes.
