1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour for a GF option)

1 cup unsweetened almond milk (or any milk of your choice)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil (for drizzling)

Fresh parsley, chopped (for garnish, optional)

Celery sticks and blue cheese dressing (for serving, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (232°C) and line a large baking sheet with parchment paper.

    Prepare the Cauliflower: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk together until well blended.

      Create the Batter: Gradually pour in the almond milk while whisking to form a smooth batter. Make sure there are no lumps; it should be thick enough to coat the cauliflower florets.

        Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring they are evenly coated. Shake off any excess batter, then place them on the prepared baking sheet in a single layer.

          Bake the Bites: Drizzle the coated florets with olive oil. Bake in the preheated oven for 25-30 minutes, turning halfway through, until they are golden brown and crispy.

            Buffalo Sauce Toss: While the cauliflower is baking, heat the buffalo sauce in a small saucepan over low heat until warmed. Once the cauliflower bites are out of the oven, transfer them to a large bowl. Pour the warm buffalo sauce over the bites and gently toss to coat them evenly.

              Final Bake: Return the sauced cauliflower to the baking sheet and bake for an additional 10-15 minutes, until they are crispy and the sauce has slightly caramelized.
