1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1 cup water (adjust as needed for batter consistency)

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons melted vegan butter or regular butter

Optional: chopped green onions and celery sticks for serving

Instructions
 

Preheat your oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the batter: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, and salt. Gradually add water while whisking until you achieve a consistency similar to pancake batter. It should be thick enough to coat the cauliflower but not so thick that it clumps.

      Coat the cauliflower: Dip each cauliflower floret into the batter, ensuring they are fully coated. Shake off any excess batter and place them on the prepared baking sheet in a single layer.

        Bake the cauliflower: Bake the coated cauliflower in your preheated oven for 20-25 minutes or until golden brown and crispy, flipping halfway through for even cooking.

          Prepare the buffalo sauce mixture: In a medium bowl, combine the buffalo sauce and melted butter. Once the cauliflower bites are done baking, remove them from the oven and immediately toss them in the buffalo sauce mixture until well coated.

            Final bake: Return the sauced cauliflower to the baking sheet and bake for an additional 10-15 minutes until they are hot and the sauce is sticky.

              Serve: Remove from the oven and let them cool for a few minutes. Serve the buffalo cauliflower bites with optional chopped green onions and celery sticks on the side for crunch.
