Ingredients

For the Brownie Bottom:

1 cup (225g) unsalted butter, melted

2 cups (400g) granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup (120g) all-purpose flour

1/2 cup (45g) unsweetened cocoa powder

1/2 teaspoon salt

For the Cheesecake Layer:

24 oz (680g) cream cheese, softened

1 cup (120g) granulated sugar

3 large eggs

1 teaspoon vanilla extract

1/2 cup (120ml) sour cream

1/4 cup (60ml) heavy cream

For Topping (Optional):

Whipped cream

Chocolate shavings or cocoa powder

Fresh berries

Instructions

Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper for easy removal.

    Prepare the Brownie Bottom:

      - In a large mixing bowl, combine the melted butter and granulated sugar. Mix until well combined.

        - Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.

          - Sift in the flour, cocoa powder, and salt. Mix until just combined, being careful not to overmix.

            - Pour the brownie batter into the prepared springform pan, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs. Allow to cool slightly, then set aside.

              Make the Cheesecake Layer:

                - In a large bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar, mixing until fully incorporated.

                  - Add the eggs one at a time, mixing well after each. Stir in vanilla extract, sour cream, and heavy cream until the mixture is smooth and silky.

                    Combine Layers:

                      - Pour the cheesecake mixture over the cooled brownie bottom, spreading it evenly.

                        Bake the Cheesecake:

                          - Bake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool gradually for about 1 hour. This helps prevent cracking.

Chill: Once cooled, cover and refrigerate the cheesecake for at least 4 hours, preferably overnight to enhance the flavors.

Serve: When ready to serve, remove the cheesecake from the springform pan. Top with whipped cream, chocolate shavings, or fresh berries if desired.
