4 bone-in pork chops (about 1-inch thick)

1/4 cup brown sugar (packed)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

Fresh rosemary (for garnish, optional)

Prepare the Marinade: In a small bowl, mix the brown sugar, garlic powder, onion powder, smoked paprika, salt, and black pepper. In another bowl, whisk together the olive oil, Dijon mustard, and apple cider vinegar until combined.

    Marinate the Pork Chops: Rub the spice mixture all over the pork chops, ensuring they are well-coated. Then, drizzle the olive oil mixture over the chops and marinate for at least 30 minutes (or up to 4 hours in the refrigerator if time allows).

      Preheat the Oven: Preheat your oven to 375°F (190°C).
