Ingredients

1 cup unsalted butter, softened (2 sticks)

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

3 cups old-fashioned rolled oats

1/2 cup chocolate chips (optional)

1/2 cup chopped nuts (walnuts or pecans) (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter with brown sugar and granulated sugar using an electric mixer until the mixture is light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Beat in the egg and vanilla extract until fully incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.

Mix Dry with Wet: Slowly add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.

Fold in Oats: Gently fold in the rolled oats, ensuring they are evenly distributed throughout the batter. If using, also fold in the chocolate chips and chopped nuts.

Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers appear slightly underbaked for that chewy texture.

Cool Down: Remove cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Once cooled, dive into your extra chewy brown sugar cinnamon oatmeal cookies! Store any leftovers in an airtight container for up to a week (if they last that long!).
