1 large loaf of brioche or challah bread, cut into 1-inch cubes

4 ripe bananas, sliced

6 large eggs

2 cups whole milk

1 cup brown sugar, packed

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/4 cup maple syrup (for drizzling)

1/2 cup chopped walnuts or pecans (optional)

Powdered sugar for serving (optional)

Instructions
 

Prepare the Pan: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick spray.

    Layer the Bread and Bananas: Place half of the bread cubes evenly in the bottom of the prepared baking dish. Layer half of the sliced bananas over the bread.

      Make the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, brown sugar, vanilla, cinnamon, nutmeg, and salt until well combined.

        Combine Layers: Pour half of the egg mixture evenly over the first layer of bread and bananas. Then, add the remaining bread cubes on top followed by the rest of the sliced bananas. Finally, pour the remaining egg mixture over the entire casserole. If using, sprinkle the chopped nuts on top.

          Soak: Cover the baking dish tightly with aluminum foil and let it sit in the refrigerator for at least 30 minutes (or overnight for an even richer flavor).

            Bake: After soaking, remove the foil and bake in the preheated oven for 45-50 minutes, or until the casserole is set and golden brown on top.

              Serve: Let the casserole cool for about 10 minutes. Slice into squares and serve warm, drizzled with maple syrup and a dusting of powdered sugar, if desired.
