2 cups fresh broccoli florets

2 medium potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup thickened cream

1 ½ cups shredded sharp cheddar cheese

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 4-5 minutes until translucent.

    Add minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.

      Stir in the diced potatoes, broccoli florets, salt, pepper, and paprika. Sauté for another 2-3 minutes.

        Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes and broccoli are tender.

          Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half and leave some chunks for texture.

            Slowly stir in the thickened cream and shredded cheddar cheese, mixing until the cheese is completely melted and the soup is creamy. Adjust seasoning if needed.

              Serve hot, garnished with fresh parsley.
