Broccoli Cheese Balls

A delightful twist on a classic dish.

Ingredients

2 cups fresh broccoli florets, steamed and finely chopped

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (plus extra for coating)

2 large eggs, beaten

1/4 cup cream cheese, softened

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil for frying

Instructions

Start by steaming the broccoli florets until tender, about 5-7 minutes. Once cooked, finely chop them and let them cool.

In a large mixing bowl, combine the chopped broccoli, cheddar cheese, Parmesan cheese, breadcrumbs, cream cheese, beaten eggs, minced garlic, onion powder, paprika, salt, and pepper. Mix until well combined.

Preheat your oven to 375°F (190°C) if you prefer baking instead of frying.

Using your hands, take small portions of the mixture and roll them into balls, about the size of a golf ball. Roll each ball in the extra breadcrumbs to coat.

For Baking: Place the formed balls on a baking sheet lined with parchment paper. Lightly spray or brush them with olive oil. Bake for 20-25 minutes, or until golden brown and crispy.

For Frying: In a large skillet, heat a couple of tablespoons of olive oil over medium heat. Fry the balls in batches, making sure not to overcrowd the pan, until they are golden brown and crispy on all sides, about 3-4 minutes per side. Drain on paper towels.

Allow the cheesy broccoli balls to cool slightly before serving. They pair wonderfully with a dipping sauce like ranch or sriracha mayo!
